![]() ![]() We harvested a majority of the grapes for the Apothic Dark at night in cool temperatures to preserve the character of the fruit, then we fermented the varieties between 88° to 90☏. Wines from this vintage showcase vibrant acidity and concentrated flavors. California’s 2021 growing season was cool and mild, with a heat spell in August that resulted in an earlier than average harvest. We selected the majority of the grapes for Apothic Dark from Lodi in California’s Delta region. Hints of coffee and mocha help round out the wine’s full body and long, lingering finish. Notes of blueberry, blackberry and plum are accented by dark chocolate and spice on the rich, plush palate. The grapes were destemmed, lightly crushed and cold soaked overnight to encourage extraction of the fruit’s intriguing color and structure.īold, daring and velvety smooth, our 2021 Apothic Dark offers an unforgettable taste of the darkest of fruits. A hint of Grenache adds intensity to the fruit expression, while the unique Graciano variety was blended in to brighten the acidity and add notes of red currant. My son found it smelled like a barrel, which makes sense as it has been aged in whiskey barrels. Nose : closed at first, fruit esters, leather, wood, red and black fruits, jam, vanilla, cooked red and black fruits. Purple brownish red with a bright red rim and very long legs. Apothic Inferno California Red Blend 2016 The price of this one was $10 when I bought it a while back here at my local wine store, Stirling Fine Wines in Central New Jersey, but for the recent ones I picked up in the past months, the price has jumped up to $14. The one I tasted a couple of weeks ago, early January (thus the Christmas tree in the background) was the vintage 2016 but I have also bought some more recent vintage in the past months. It was supposed to be a small batch and limited release but I have found it readily available over and over, so I guess it had some success and they kept making it every year. This last one is the one specially aged in whiskey barrels for 60 days and called Apothic Inferno.
